Walnut & Banana Muffins

Ingredients

1½ cup flour (wholemeal is better for ya)

½ cup coconut sugar

½ cup walnuts, chopped

1 tsp cinnamon

1 tsp baking soda

Pinch salt

1 cup mashed banana (approx. 3 ripe bananas)

2 eggs

½ cup maple syrup

1/4 cup milk

2 tbsp coconut oil

1 tsp vanilla extract


Method


1. Preheat oven to 180°C and line a muffin tray with liners and cooking spray.

2. Set aside some chopped walnuts for topping

3. Place remaining walnuts, flour, coconut sugar, cinnamon, baking soda and salt into a medium bowl and mix.

4. Fold in eggs, milk, maple syrup and mix

5. Add in the coconut oil and mix

6. Fill muffin tray about ¾ full, and sprinkle with the chopped walnuts if desired.

7. Place the muffins into the oven and bake for 20-25 minutes until cooked.

8. Let them sit in the oven for 5 minutes to cool, before removing them and placing onto a cooling rack.

9. Serve and store remaining muffins.
