Ingredients

  • 4 salmon fillets (approx. 120g each)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tbsp honey

  • 1/4 cup balsamic vinegar

  • 4 tsp Dijon mustard

  • 1 cup brown rice, cooked

  • 2 cups mixed salad leaves

  • Salt and pepper to taste

  • 1 tbsp chopped fresh oregano, for garnish

Method

  1. Preheat oven to 200°C. Line a baking sheet with aluminium foil and spray with oil.

  2. In a saucepan, cook the garlic until tender in the olive oil about 2 to 3 minutes.

  3. Add honey, balsamic vinegar, Dijon mustard, and salt and pepper to taste. Simmer for about 3 minutes until slightly thick. Remove from heat.

  4. Place the salmon fillets on the baking sheet. Brush the salmon with the balsamic glaze. Reserve half portion for brushing at the end.

  5. Bake for 6 to 10 minutes until tender.

  6. Use the remaining glaze and garnish with the oregano. Serve with cooked rice and salad.
