Ingredients
1 medium banana
2 tbsp coconut flour
1 tbsp milk
3 tbsp vegan protein powder
1 tbsp coconut yoghurt
1/4 piece lemon, squeezed
1/2 tsp cinnamon
Method
1. Add the banana to a bowl and mash until it resembles a smooth consistency. Add the protein powder, coconut flour and milk and mix well.
2. Heat a non-stick frying pan and add the batter. Cook on one side for a couple of minutes or until it begins to set. Flip and heat the other side until cooked.
3. Serve on a plate topped with a dollop of yoghurt, lemon juice and a sprinkle of cinnamon.
