Ingredients
12 cherry tomatoes
1 tbsp olive oil
1/4 cup baby spinach
4 egg whites
1/2 spring onion
1/2 cup four bean mix
Method
1. Preheat grill on high. Place tomatoes on a baking tray. Spray with oil. Grill for 6 minutes turning once.
2. In the meantime finely chop half the spinach. Whisk egg whites, season with salt and pepper and stir in shredded spinach and chopped onion.
3. Heat the liquid olive oil over medium-high heat in an frying pan. Pour the egg mixture into the pan.
4. Swirl to coat then cook for 1 to 2 minutes or until almost set.
5. Top half the omelette with the beans and the remaining spinach and fold the omelette in half to enclose filling. Transfer to a plate.
6. Serve with tomatoes.
