Ingredients
1 medium potato
1/2 tbsp olive oil
1/4 brown onion
1/2 green capsicum
110g lean mince meat
75g canned red kidney beans
Method
Finely chop the capsicum and onion. Drain and rinse the kidney beans.
Preheat oven to 180°C. Scrub the potato clean and dry. Prick all over with a fork.
Wrap the potato in foil and place on a baking tray. Bake for 45mins - 1 hour or until soft when pierced with a fork. Set aside to cool for about 10 minutes.
In the meantime, spray a non stick frying pan with oil and heat over a medium-high heat.
Add the onion and stir-fry for 5 minutes or until clear.
Add the minced beef and cook until meat has browned.
Add the capsicum and stir-fry until softened.
Remove the frying pan from the heat; add the kidney beans and stir to combine.
Unwrap the potato. Score the top of the potato with a cross and gently part open the potato. Mash the flesh lightly with a fork.
Fill with the mince meat and bean mixture and season to taste with your favourite herbs and spices. Serve and enjoy.
