Ingredients
4 cups rolled oats
1 cup walnuts
½ cup pepitas
½ cup olive or coconut oil
½ cup maple syrup
1 tsp vanilla extract
1 tsp sea salt or 3/4 tsp coarse salt
Method
1. Preheat oven to 180°C. Line a large, rimmed baking sheet with parchment paper.
2. In a mixing bowl, combine the oats, nuts, seeds and salt. Mix well to blend. Option to add ½ tsp cinnamon.
3. Pour in the oil, syrup and vanilla. Mix well until coated. Transfer the granola mixture to the baking sheet and spread evenly with a large spoon or spatula.
4. Bake until lightly golden for about 20-25 minutes while stirring halfway. Cool the granola for at least 45 minutes.
5. Break the granola into pieces by hand or the large spoon.
6. Store in an airtight container in room temp or freezer bag if freezing.
