Ingredients
4 cups spinach
4 large eggs
2 small tomatoes
1/4 cup onion, chopped
3 tbsp feta
1 tbsp olive oil
Salt and pepper
2 slices wholemeal bread (or other)
Method
1. Preheat oven to 160°C fan forced.
2. Wilt spinach in saucepan and place into a medium oven-proof baking dish.
3. Gently break the eggs on top of the spinach.
4. Bake for approx. 30 minutes, or until eggs are cooked to your liking.
5. Meanwhile, slice the tomato and onion
6. Once cooked, crumble the cheese and vegetables over the egg bake.
6. Drizzle dish with the oil, add salt and pepper, and serve with bread slices.
