Egg & Cheese Burrito

Ingredients

  • 2 eggs

  • 1 tsp chives, chopped

  • 1/3 cup cheddar, grated

  • 1 tbsp olive oil

  • 1 tortilla

  • 1 tbsp light sour cream

  • Salt and pepper


Method

1. Heat olive oil in a pan. Cook scrambled eggs, then mix in cheddar cheese. Still well to combine. Season to your liking. Set aside when done.

2. In the same pan, heat the tortilla for a few minutes then top with the egg and cheese mixture. Sprinkle with chopped chives and drizzle with sour cream. Fold in the tortilla to close and form the burrito.

3. Flip and cook the burrito for a few more seconds. Transfer to a plate and slice into half. Enjoy!
