Ingredients
6 large eggs, beaten
1/2 cup low fat milk
Salt and pepper
2/3 cup cheddar, grated
6 tsp olive oil
1 small avocado, diced
2 small tomatoes, thinly sliced
4 tsp lemon juice
1 tbsp fresh chives
Fresh basil
Method
1. Pre-heat grill to high. Whisk eggs and milk in a medium bowl. Season with salt and pepper.
2. Heat 2 tsp oil in a non-stick frying pan. Pour in egg mixture and cook over medium heat for 3-4 minutes until almost set.
3. Sprinkle omelette with cheese and place under hot grill for a few minutes until
puffed and golden.
4. Toss avocado and tomato with lemon juice and remaining teaspoon of oil. Sprinkle avocado mixture and half of the chives over one-half of omelette. Fold omelette in half and slide onto a warm plate to
serve.
5. Scatter with fresh basil. Enjoy!
