Ingredients
2 egg whites
1 egg
1/4 cup pumpkin
1/2 tbsp chives
1 wrap
2 tbsp cheese
Method
1. Place the grated pumpkin in a colander and squeeze out the excess water.
2. Whisk the eggs in a bowl.
3. In a bowl add the eggs, pumpkin, cheese and chives. Season with salt and pepper and mix well.
4. Heat a non-stick frying pan. Pour in the egg mixture and continue to stir until the eggs are scrambled and the pumpkin is cooked.
5. Heat the wrap in microwave to soften (approx. 20 seconds)
6. Top the wrap with the scrambled egg mixture. Wrap and serve.
