Blueberry Muffins

Ingredients

  • 1½ cup whole wheat flour

  • ½ cup coco sugar

  • 3/4 cup blueberries

  • 1 tsp baking soda

  • 1/8 tsp salt

  • 2 large eggs

  • ½ cup maple syrup

  • 1/4 cup milk

  • 2 tbsp coconut oil

  • 1 tsp vanilla extract


Method


1. Preheat oven to 180°C and line a muffin tray with liners and cooking spray.

2. Place dry ingredients into a medium bowl and mix. Fold the wet ingredients next except the coconut oil. Mix again then add in the coconut oil. Mix again.

3. Fill muffin tray about ¾ full each.

4. Place the muffins into the oven and bake for 20-24 minutes and until cooked.

5. Cool for 5 minutes then remove from the oven to continue cooling.

6. Serve and store remaining muffins.
