Ingredients
60g lean beef fillet (sliced into strips)
1/4 cup baby spinach
70g red capsicum
70g green capsicum
50g snow peas
10 cherry tomatoes
1 tbsp white wine vinegar
1 tsp mustard
1/2 tbsp sesame seeds
1/2 tbsp olive oil
1 packet Hokkien noodles
Method
1. Chop capsicum and snow peas, halve cherry tomatoes and set aside.
2. Spray a non-stick frying pan with oil and heat. Cook the beef to your liking, 2-5 mins.
3. Cook the noodles as directed and drain well.
4. While the noodles are still warm toss with the vegetables and beef.
5. Add the vinegar, mustard and sesame seeds. Toss gently and serve.
