Barley and Lamb Tabbouleh

Ingredients

8 tbsp pearled barley

1tbsp olive oil

80g lean lamb

8 tbsp parsley

1/2 cup mint

4 tomatoes

1/2 red onion

10 Kalamata olives

1/2 tsp ground cinnamon

1/2 tsp ground cumin

2/3 lemon


Method

1. Cook the barley as per packet instructions. Drain well, rinse and drain well again.

2. Dice lamb.

3. In the meantime spray a non-stick frying pan with the olive oil and heat over a medium-high heat. Add the lamb and stir-fry until cooked to your liking.

4. Finely slice the red onion, chop the tomatoes and roughly chop the olives, finely chop the parsley and mint.

5. Add the cooked barley and lamb to a bowl with the parsley, mint, tomato, red onion, olives, cinnamon, cumin, lemon zest and juice. Mix well to combine.

6. Serve and enjoy.
