Ingredients
600g chicken breast fillets (4 fillets)
2 cups breadcrumbs
¼ cup parmesan cheese
1 egg
2 tbsp low fat milk
1/3 cup wholemeal flour
4 potatoes, sliced into sticks
2 tbsp olive oil
1 tsp salt
4 cups mixed greens
Method Steps
Pound the chicken to about 2 cm thick.
Combine the breadcrumbs and cheese in a bowl.
Whisk egg and milk in another small bowl and place flour on a large plate.
Preheat the air fryer to 200°C.
Dip the chicken in flour first, then dip or brush in egg mixture, then lastly the breadcrumb mixture. You may chill for 10-15 minutes or cook right away.
Cook the chicken, turning halfway through, until golden for about 12-15 minutes. Set aside and cover to keep warm.
Prepare the fries: lower air fryer temp to 180°C. Drizzle potato sticks with olive oil and sprinkle with salt. Air fry for about 12-15 minutes or until crispy.
Serve with mixed fries and mixed greens.
