Air-fried Schnitzel with Fries and Mixed Greens

Ingredients

  • 600g chicken breast fillets (4 fillets)

  • 2 cups breadcrumbs

  • ¼ cup parmesan cheese

  • 1 egg

  • 2 tbsp low fat milk

  • 1/3 cup wholemeal flour

  • 4 potatoes, sliced into sticks

  • 2 tbsp olive oil

  • 1 tsp salt

  • 4 cups mixed greens


Method Steps

  1. Pound the chicken to about 2 cm thick.

  2. Combine the breadcrumbs and cheese in a bowl.

  3. Whisk egg and milk in another small bowl and place flour on a large plate.

  4. Preheat the air fryer to 200°C.

  5. Dip the chicken in flour first, then dip or brush in egg mixture, then lastly the breadcrumb mixture. You may chill for 10-15 minutes or cook right away.

  6. Cook the chicken, turning halfway through, until golden for about 12-15 minutes. Set aside and cover to keep warm.

  7. Prepare the fries: lower air fryer temp to 180°C. Drizzle potato sticks with olive oil and sprinkle with salt. Air fry for about 12-15 minutes or until crispy.

  8. Serve with mixed fries and mixed greens.
